Wow, Beth, this is a fun fun post. The piggy party looked like a blast, and I loved your invitations...your creative gene was doing it's job!! The piggy tail was just perfect...I had noticed it before I read about it! Well, your little boys are so lucky to have a Mommy that goes to so much work to make their birthdays special..and it is so fun to celebrate it with friends and family. Did you know we got to attend lots of Jennifer's birthday parties as she was growing up, and it was pretty special! A very fun update on your very outdated blog!! Tee hee...I'd been checking in now and then!!
Thanks for the update...sorry to have missed the party. My day wasn't near as much fun. This is my first e-mail since my operation(s). I just haven't been up to it. I think I'making progress, but it is tough and slow...enough bad stuff. Give he boys a hug for me. Thanks for blessing us with a couple more boys!
Avocado Egg Mangle is an example of how a marriage should work. Troy loved egg mangle toast (soft boiled egg mashed onto toast) and Beth loved Avocado toast (Avocado mashed onto toast duh!) Put them together and ... all the result of listening to each other and being willing to compromise. We're trying to get better at that in all areas of our lives.
Ingredients: Ripe Avocado Egg Bread(Sourdough is good, a bread with too much flavor of its own is distracting.) salt, pepper, tabasco
Directions: (This is all about timing) 1. Soft boil eggs. 2. Mash avocado and add a little salt. Heat it up a little bit in the microwave. 3. Toast your bread. 4. Smear avocado on bread. 5. Mangle egg on top of it all (with out the shell, duh!) 6. Sprinkle on pepper, salt, and tabasco to taste.
Notes: -In a perfect world, the eggs, toast, and avocado are all done at the same time, so things don't cool down too quickly. -Remember it is suppose to be messy. -If you get too carried away with the pepper and tabasco, you will miss the subtle yumminess.
